Chef’s Profile

Ryan Venning started his career in Durban South Africa where he attended the International Hotel School and trained for 3 years. During this time he was awarded the principle award for the apprentice of the year and then went on further to cook for the late Nelson Mandela.

He moved on to work at a Gastro Pub called “Stokers Arms” in Durban and met current work colleague Michael Smith. Ryan was very influenced by Michael and decided to move to Cornwall.

After his move to Cornwall in 2004 he became the Head Chef at Porthmeor Beach Café then later moved onto Porthminster Beach Café where he worked 3 years as a Chef De Parte, in 2007 he was promoted to Head Chef at Porthgwidden Beach Café which he ran very successfully for 4 years.

In 2011 he became Head Chef at the Red Herring at Bedruthan Steps Hotel where in a very short period of time managed to feature in the “The Good Food Guide” and scored 4 in the first year of opening.

In 2012 Ryan was appointed Head Chef at the Porthminster Beach Café where he is still established and is the forefront of the Cornish cooking scene.  Ryan achieved 2 Rosettes last year for Porthminster Beach Café and featured in “The Great British Cook Book 2014” along with scoring a 4 in the “Good Food Guide” he is very determined to keep raising the level of food and service. Ryan uses big flavours with modern twists and is also inspired by the lightness of Asian ingredients.

Recently in 2015 the Café has retained its two AA Rosettes under his command and was also ranked number 61 in the UK at the highly prestigious National Restaurant Awards
